recipe | a simple, savory salad

A few weeks ago, we went to our friends’ home for dinner and were served some of the tastiest Greek-inspired dishes.  Among those was this savory lima bean salad.

Since then, we’ve made it about five times.  The combination of feta cheese, lima beans, and lime juice is simply irresistible 

Here’s the recipe, so you can enjoy this scrumptious dish, too.

Ingredients
– 1 1/2 frozen lima beans
– 5 1/2 oz. feta cheese
– 1 bunch of scallions, sliced thinly
– lemon wedges
– yogurt

Dressing
– 6 tbsp EVOO
– rind of 1 lemon, grated
– 2 tbsp lemon juice
– 1 small garlic clove, crushed

– 2 tbsp fresh dill, chopped

– 1 pinch of sugar
– pepper, to taste

Whisk above together in small bowl to make dressing.

Cook beans briefly (4-5 minutes) in boiling, salted water, then drain.  Pour dressing over beans while still warm.  Crumble feta cheese and sprinkle over beans.  Add scallions and toss.  Serve warm with lemon wedges and yogurt on side, if desired.

Also, a personal update….I started my new job (working as a paralegal) last Monday.   Thanks for all the well-wishes and prayers…  It’s been going very well but I am exhausted when I get home in the evenings.  (Have any secrets on how to still have energy after a long day at work and commute?)  Since this is just a temporary job to save some money, I am still looking for an event planning job.  So if you know anyone, or would like to hire me, let’s talk, k?  🙂

P.S. I made a great tomato and peach salad a few weeks ago.  If you still have these fresh fruits and veggies lying around, you should try it!

  4. For a moment I forgot I hated lima beans. Hubs loves them- so maaaayybe i'll have to give this a shot!
