recipe | healthy(!) pumpkin muffins

OK, seriously.  These muffins will melt in your mouth.  And they’re healthy.
They’re perfect for breakfast, second breakfast, third breakfast, a snack, dessert, a birthday, etc.

Ingredients

1 2/3 cup sprouted spelt flour

1 cup canned pumpkin puree
1/4 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
3/4 tsp sea salt
1/2 cup pure maple syrup (or raw honey)
1/4 cup cold water
1/2 cup coconut oil
2 eggs

Directions

Preheat oven to 325.  Mix everything together in one medium bowl.  Stir thoroughly.

Place muffin papers in pan and fill 2/3 full with batter.  Bake for approximately 25 min.  Sprinkle with sugar (optional).  Cool on racks (or serve warm).  Makes about 12 muffins.

If you try out these pumpkin muffins, let me know!

till tomorrow,

Rebecca
