My mom’s been making this granola for years (thanks to our friend Meg for the original recipe!). My mom made a huge batch to bring on vacation this week. It’s the perfect boost of energy for a pre-skiing snack, especially if paired with raw yogurt and some juice.
To make your own huge (seriously) batch, follow the steps below. You can reduce the amounts of each ingredient if you don’t want to make 12+ cups of granola.
Ingredients
– 12 cups rolled oats
– 6 cups nuts (almonds)
– 1/4 cup flax seed
– 1 cup natural maple syrup
– 1 1/2 cups butter or oil (something neutral like coconut oil)
– 1 tablespoon cinnamon
Directions
Stir together dry ingredients. In separate bowl, combine oil, syrup and cinnamon. Drizzle over oat mix and toss. Bake in batches on cookie roll pan at 300 degrees. Stir after 15 minutes. Bake 30 minutes total, or until ever-so-slightly golden.
If you do make all 12+ cups of granola, it stores wonderfully in mason jars (and looks pretty, too). Hope you enjoy this recipe.

In the "directions" portion you say to combine oil, honey and cinnamon. Do you have a specific measurement for the honey? Just wondering. Josiah loves it when I make homemade granola. 🙂

Oops, thanks for the catch, Miriam!! 🙂 I've made this with syrup or raw honey, and in the directions I typed honey instead of syrup!! But you can use either…I prefer the syrup!
