recipe | no flour breakfast muffins

As I mentioned on Twitter last night, my mom made these incredible no four breakfast muffins.  I almost didn’t try them because, well, I like flour.  But I took a bite, and was surprised!  These muffins are not only bearable, they are delicious.  They taste like banana and chocolate, and go perfectly well with a cup of coffee (with a sprinkle of cinnamon).  And they are gluten free.

Ingredients
– 6 fresh eggs
– 1/2 tsp sea salt
– 3/4 cup raw honey
– 1/2 cup melted coconut oil
– 4-5 mashed bananas
– 1 cup cocoa

Directions
Preheat oven to 350.  Mash bananas and add eggs.  Mix well and add salt, honey, cocoa and oil.  Fill lined muffin cups 2/3 full and bake for about 15 minutes.

Pair with a freshly brewed cup of coffee and you’ll be set for the day!
