recipe | sweet linzers for your Valentine

During my senior year at college, a package arrived one day.  If you’ve ever been away at college, you know how few and far between (and so appreciated) packages are.  Inside was a bundle of these sweet linzer cookies from my dear friend Wendy.  Word spread quickly, and I was the most popular girl on my floor that afternoon; everyone wanted a homemade cookie.

I asked Wendy if we could make a Valentine’s version of these special cookies, and she readily agreed.  So this Saturday, we set up camp in her kitchen and baked//styled to our hearts’ content.

Ingredients
– 3/4 pound unsalted butter at room temperature
– 1 cup granulated sugar
– 1 tsp pure vanilla extract
– 3 1/2 cups all purpose flour
– 1/4 tsp salt
– raspberry preserves
– confectioners’ sugar, for dusting

Directions
Preheat oven to 350 degrees.

In the bowl of an electric mixer fitted with the paddle attachment, mix together the butter and sugar until they are just combined.  Add the vanilla.  In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture.  Mix on low speed until the dough starts to come together.  Dump onto a surface dusted with flour and shape into a flat disk.  Wrap in plastic and chill for 30 minutes.

Roll the dough 1/4-inch thick and cut 2 3/4-inch rounds with a plain or fluted cutter.  With half of the rounds, cut a heart out of the middle with a 1-inch heart cutter (Wendy made ours by reshaping a metal cookie cutter!).  Place all the cookies on an ungreased baking sheet and chill for 15 minutes.

Bake the cookies for 15-20 minutes, until the edges begin to brown.  Allow to cool to room temperature.  Spread raspberry preserves on the flat side of each solid cookie.  Dust the top of the cut-out cookies with confectioners’ sugar and press the flat sides together, with the raspberry preserves in the middle and the confectioners’ sugar on the top.

You still have time to make these pretty little cookies and surprise your loved one for Valentine’s Day tomorrow!  Serve with some coffee or tea, snuggle up and watch a romantic comedy.  Or bring your best friend a package tied up with red and white twine.

    My local bakery makes these cookies which I am crazy for – they are so good they should be allowed to be eaten at any time of the year, not just at valentine's 🙂 I've always wanted to make them myself so thanks for supplying the recipe!!

    Also – I have to tell you that the 'best ever icing' that you were talking about on Friday is ACTUALLY the BEST EVER icing and was a total success… I made it and literally said, out loud, "oh, my, god." Thanks so much for sharing and bringing to our attention! It was a hit at the party I went to (and the cake recipe I used was the Hellman's chocolate mayonnaise cake recipe which is also pretty epic!)

  17. Those are too pretty to eat (almost!). I so wanted to make some Valentine's sugar cookies but sadly ran out of time. Oh, and I still get unreasonably giddy at packages in the mail! 🙂
