recipe | banana nut bread

How was your weekend?  I slept a lot, since I’m trying to get rid of this mean cold I’ve had for over a week.  My goal was to finish a few projects, but I only got one project partially done.  Oh well, I’ll just have to work extra hard this week.

Start your week off with seriously delicious banana nut bread.  It melts in your mouth, and tastes extra good with some butter.  After I finished taking photos, my family devoured the loaf in approximately 3 minutes.  If you have one, bake it in a thrifted loaf pan (mine is made in Germany and is steel) – makes it so much more enjoyable when using a vintage treasure!

Ingredients
2 1/2 cups sprouted spelt flour
1 cup rapadura (or sugar)
3 1/2 tsp. baking powder
1 tsp. salt
3 tbsp. melted coconut oil
3/4 cup milk
1 egg
1 cup finely chopped walnuts
1 cup mashed bananas (2-3 bananas)

Directions
Preheat oven to 350 degrees.  Grease and flour loaf pan.  Measure all ingredients into large mixing bowl.  Stir until mixed thoroughly.  Pour into pan.  Bake 55-65 minutes, or until wooden toothpick comes out clean.  Enjoy while still warm!
