recipe | the best cabbage salad

My most recent recipes may lead you to believe I eat nothing but cabbage these days. This is untrue. But I do feel compelled to share this incredibly healthy and surprisingly delicious recipe with you. It mixes three types of cabbage - red, savoy and green - and a few perfectly complimentary toppings! 


Ingredients - Salad
- 2 cups green cabbage, thinly cut
- 1 cup red cabbage, thinly cut
- 1 cup savoy cabbage, thinly cut
- pumpkin seeds, to taste
- sunflower seeds, to taste
- dried cranberries

Ingredients - Dressing
- 1/3 milk (we used raw milk...you could use almond or soy)
- 1 apple, peeled and sliced
- 1/4 cup raw cashew butter
- 2 tbsp balsamic vinegar
- 1 tbsp raisins
- 1 tbsp pumpkin seeds

Directions
Mix together three cabbages. Keep toppings (pumpkin seeds, sunflower seeds and dried cranberries) separate to sprinkle on top. 

In blender, mix together milk, apple, cashew butter, vinegar, raisins and pumpkin seeds. 

Pour dressing over cabbage and toss. Optional - garnish with pumpkin seeds, sunflower seeds and dried cranberries. I like putting the garnishes out in separate bowls, since I don't always love garnishes and appreciate it when people make them optional. I actually only added the dried cranberries to my plate, but my sister added the pumpkin and sunflower seeds. 


Your plate will look like this when you're finished. Promise. Actually, you might even be tempted to lick it clean.

What I love most about this recipe is it has no oil. The nuts make it unbelievably tasty and sweet! Do you have a favorite salad/dressing recipe? Do share!
