Recipe | Chocolate + Banana Muffins

 

 

 

I woke up early this morning, fed Zoe, neatened the living room, put the baby down for a nap, folded 5 loads of laundry (don’t judge), went on pinterest. It was a productive morning. After my coffee, I got really hungry for something with chocolate. I knew I had cocoa powder and chocolate chips, so I decided to make some double chocolate muffins. I was drooling just thinking about sitting down at the kitchen table, glass of cold milk in my hand, and a warm muffin sitting on my plate. After I mixed the flour, sugar, etc, I started to collect the wet ingredients, only to discover we had no eggs! I was bummed. So I tweeted, and a few people told me I could use bananas or apples. Who knew?! So I quickly searched online for some conversions and found this vegan recipe, which I’ve adapted here. The muffins came out heavenly, and I’ve already eaten 2. If I don’t hide them (in the freezer, so they’re not conveniently eatable), they’ll be gone by the time Joe gets home from work.

Chocolate Banana Muffins

Ingredients
– 3/4 cup unbleached all purpose flour
– 3/4 cup organic whole wheat flour
– 1/4 cup cocoa powder
– 1 tsp baking soda
– 1/4 tsp baking powder
– 1/2 tsp salt
– 1/2 cup raw sugar
– 1/2 cup semi sweet chocolate chips
– 1 cup mashed banana (confession: I used baby food bananas because I didn’t have eggs OR whole, fresh bananas)
– 1/2 cup whole milk
– 1 tsp vanilla
– 1/3 cup melted butter

Directions
– Preheat oven to 350 degrees. Line 12-cup cupcake pan with paper liners.
– In a large bowl, mix together all purpose flour, wheat flour, cocoa powder, baking soda, baking powder, salt, and sugar.
– In a medium bowl, mix together banana, milk, vanilla and butter.
– Add wet ingredients to dry; stir to combine.
– Mix in chocolate chips.
– Spoon into muffin papers, about 1/3 cup per muffin.
– Bake for 20-25 minutes or until toothpick comes out clean.
– Transfer to wire rack to cool.

These muffins are just the way I like them: not very sweet. You could add some sugar or chocolate chips, or both, if you prefer a sweeter muffin. Enjoy (preferably with a glass of cold milk)!
