Recipe | Winter Salad with Grapes, Pear, & Manchego

 

Today’s recipe isn’t really a recipe since I don’t have any measurements or quantities to give you. It’s more of a tasty salad combination idea. These usually result at the end of the week when I look in the fridge to use up any remaining vegetables we have…this time it was baby spinach, pears, grapes, grated manchego cheese, a drizzle of balsamic vinegar and extra virgin olive oil and some salt and pepper. So there’s the recipe for you! Sometimes the haphazardly thrown together salads are the best types of salads…and in this one, the pear soaks up the balsamic and it’s just delicious!

My mom’s visiting this week, and we made a huge salad with whatever ingredients we could find and sounded good. Ended up being tatsoi (also known as rosette bok choy), radicchio, a bit of romaine, tomatoes, avocado, pumpkin seeds, lightly fried black beans, grated sharp cheddar. Oh my it was delicious. And that was dinner….my favorite kind of meal! I’m always looking for easy salad ideas, so if you have any favorites, please do share!

    So simple but exactly what I need to refresh on a cold winter's day. And anything with manchego has got my attention.

  2. Great salad recipe, i think using the seasonal fruits and veggies and making salad of it sounds so healthy. I am surely giving it a try.
