The clafoutis. The simplest, perhaps most rewarding dessert (or breakfast) there ever was. As Julia Child said, “The clafoutis … is peasant cooking for family meals, and about as simple a dessert as you can imagine: a pancake patter poured over fruit in a fireproof dish, then baked in the oven. It looks like a tart, and is usually eaten warm.”
Just in time for the holidays, I put together a plum clafoutis and the recipe is over on The Nest. You can make a clafoutis with lots of different fruits, including apples and pears! I enjoy a bit more egg in my clafoutis (but certainly not jiggly), and I also always make a larger batch, so that we have leftovers (maybe) for the next day’s breakfast.
