Mashed potatoes are my absolute favorite part of holiday menus. These are no exception! I mean, really, they’re a big mouthful of potatoes, garlic, butter, and cheese. Does it get much better than that? I partnered with Finlandia for this recipe, and used their Black Garlic Creamy Gourmet Cheese (which was delicious enough to eat by the spoonful). The taste is legendary, and you can find Finlandia Creamy Gourmet Cheeses at Shoprite, Price Chopper and Kings supermarkets.
Cheesy Garlicky Smashed Red Potatoes
2 lb potatoes
4-6 tbsp butter
3 cloves garlic, peeled and minced
1 container black garlic creamy gourmet cheese
1/4 cup chives, chopped
salt and pepper, to taste
Cut potatoes into 1-2 inch pieces, then place in large pot and generously cover with water. Add generous pour of salt, and bring to a boil. Cook until fork-tender. Drain, then place potatoes in pot again and return to medium-heat burner. Gently stir to allow potatoes to dry.
While potatoes cook, heat butter, garlic, creamy gourmet cheese in medium saucepan over medium heat. When potatoes are cooked and dried, stir in cheesy mixture. Add scallions and salt and pepper to taste. Serve piping hot!
