Recipe – Garden Salad with Baby Greens and Strawberries

We’re done with garden fresh & pick-your-own strawberries here in Northern Virginia. The season was short and sweet (sooooo much rain), and we ate salads like this one nearly every day while the strawberries lasted. I know the rest of the country is still reaping lush, juicy strawberries, and I wanted to share this simple garden salad inspiration.

Despite strawberry season’s quick departure, our garden is currently overflowing with almost every-imaginable leafy green, and I’m just so pleased! We’ve been having salads every day, sautéing our stir fry mix as a simple dinner side, and just relishing the season by spending as much time out there as possible! Walking out to the garden just before dinner, and harvesting just enough for our meal, moments before we dine, bring me SO MUCH joy! It’s such a treat to sow and reap, and teach our children about the rewards that come from hard work!

About this salad: I love the creaminess that the avocado adds. It’d even be delicious to add some avocado to the dressing for a creamy honey balsamic vinaigrette. What’s your go-to early summer salad?

Garden Salad with Baby Greens and Fresh Strawberries
serves 1

Salad Ingredients
Handful baby lettuce, rinsed and dried
6 freshly picked strawberries, sliced
2 tbsp hemp hearts
1/2 avocado, cut into chunks

Honey-Balsamic Vinaigrette Ingredients
2 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1 tsp honey
1/2 tsp dijon mustard
salt & pepper, to taste

Directions
Rinse and dry lettuce. Layer everything in bowl. Mix together the dressing, then drizzle over salad. Enjoy!
