recipe | roasted almonds with honey and thyme

Roasted almonds with honey and thyme are a little savory dish that you can serve your guests while you finish preparing dinner.  Or snack on while you drink a cup of coffee and read your favorite book.  And they’re perfect for fall.  

Ingredients
– 3 cups raw, unblanched almonds
– 1 tbsp extra virgin olive oil
– 1 1/2 tbsp raw honey 
– 1 tsp sea salt
– 1 tbsp thyme
Preheat oven to 350 degrees.  Toss the almonds and olive oil in a medium sized bowl and thoroughly coat the almonds with the oil.  Spread the almonds on a baking sheet lined with parchment paper.  Bake for about 15 minutes, until golden.  Remove from oven and transfer to a bowl.  
While the almonds are in the oven, heat the honey and salt over low heat until the honey is liquid.  Stir the thyme into the mixture.  Pour over almonds and toss thoroughly.  
Return the almonds to the baking sheet (make sure you spread them evenly) and bake until they are toasty and golden, about 8 minutes.  
Remove from oven and transfer to a bowl, and let cool (or you can serve them warm).
