recipe | salad with toppings

Happy Monday!!  Hope you had a fun (and yummy) Super Bowl weekend.  I was cheering for the Giants, so I was definitely a happy camper.  Plus, my boyfriend’s sister made the most delicious nems I’ve ever had.  I ate so many I stopped counting.  I think I need to eat salad and juice for the next week.

Today’s salad is the perfect post-Super Bowl cleanse.  It’s so incredibly fresh and I could eat a mixing bowl of it; I love the different textures and tastes.

Ingredients
– Fresh baby greens
– Fresh romaine lettuce
– Handful of raw almonds, chopped
– 1/2 ripe haas avocado
– Small handful of dried cranberries
– 1/2 orange, peeled and cut into small pieces
– Extra virgin olive oil, to taste
– White balsamic vinegar, to taste
– Salt and pepper, to taste

Directions
Wash and dry greens and lettuce.  Dump all ingredients into a large bowl and mix well.  I didn’t include exact measurements because it all depends on the size of the salad and how much dressing you like.  Eat and enjoy.

P.S. Do you like the Bodum olive oil and vinegar set?  They’re a recent thrifting purchase and they were brand new (still in the box).  I’m still so excited they’re now part of my collection!  I heart thrifting.

    Mmmmmm… cranberries and oranges!! What a great idea!! I forgot how good cranberries were on salad. And that was pretty much the best superbowl food ever!!! The nems were amaaazing…

  4. Yum! So fresh and delicious! I'd have to opt of out of the almonds though (allergies!), but I wouldn't mind substituting with extra avocado 😉
