recipe | strawberry spinach salad

Once again, I have my mom to thank for this recipe! Every time she visits, she leaves me with new & delicious recipes to try. One day for lunch, she whipped up this strawberry spinach salad with a lemon vinaigrette dressing. Even my 15 year old brother wanted some (but we didn’t leave him any). I’ve made it twice since she was here last week, and Joe loves it too! The strawberries and freshly squeezed lemon juice are the perfect counterpart for this spinach-based salad.

 All you need are the following ingredients:
– baby spinach greens
– strawberries
– lemons
– red wine vinegar
– olive oil
– poppy seeds
– cheese
– salt & pepper

Wash and dry the baby spinach leaves thoroughly, then place in large bowl. Cut up your strawberries and place on top of spinach. Sprinkle with poppy seeds and cheese. Then mix up your dressing. I used 2 parts olive oil, 2 parts freshly squeezed lemon juice, and 1 part red wine vinegar. Then I added salt & pepper to taste. But experiment with the dressing to find a oil/vinegar+lemon balance that you will enjoy!

Toss and serve!

    Strawberries in a salad are the secret best ingredient! People are always skeptical when I want to throw strawberries in, but it makes for such a good spring/summertime lunch. Mmm.

    This is one of my favourite salads too! Though I use almond slices instead of poppy seed, and feta for my cheese fix. 🙂 Soooo good.
