recipe | strawberry + cucumber salad

We’ve had an abundance of deliciously ripe strawberries recently. So yesterday I set out to make some kind of salad with cucumbers and strawberries, not knowing what the outcome would be. The result was one of the yummiest, simple, and refreshing salads I’ve had in a while. Before I added the light dressing, I tasted a cucumber and strawberry together and wasn’t impressed. But there’s something scrumptious and tangy about the addition of balsamic vinegar, agave nectar, and a bit of oil. I may or may not have eaten this entire dish in about 5 minutes, all by myself.

Have you ever used a strawberry huller? Best invention ever (and I scored mine at the Blue Ridge Hospice Thrift Store for about 10 cents). And that vintage paring knife is the nicest and sharpest peeler (and I haven’t sharpened it yet since buying it).

Here’s how I made my tasty salad…let me know if you have your own strawberry cucumber salad recipe; I’d love to try it out.

Ingredients
– 10-12 strawberries
– 1 large cucumber
– 2 tsp. raw agave nectar
– 2 tsp. balsamic vinegar
– 1 tsp. extra virgin olive oil

Directions
Wash, hull, and slice strawberries. Peel and slice cucumbers. Mix dressing in small bowl. Taste dressing and add balsamic/agave/oil as needed (mine was relatively tangy). Toss with strawberries and cucumbers. Enjoy!

    sounds delightfully perfect for a hot day! btw, most pregnant women in their third trimester are taking this chance to reach for the gummie bears… you are doing so great eating healthy during your pregnancy!

    Yum! Strawberries are the best ingredients for a salad, if you ask me.

    What a great and simple salad. I've never used agave nectar before, so I'll have to give it a try.
