Flatbread Pizza 3 Ways: Margherita, Spring Asparagus with Pickled Radish, and Greek Tzatziki

I’m thrilled to be partnering with ALDI to bring you some of my favorite recipes incorporating ALDI products! Today, I’m sharing flatbread pizza three ways: 1) an incredibly refreshing spring pizza with spinach pesto, garlicky ricotta, ribboned asparagus, quick-pickled radishes, topped off with lemon juice and coarse sea salt; 2) a Greek-inspired pizza with grass-fed ground beef, slivered red onions, tomatoes, kalamata olives, feta cheese, all smothered in a garlicky tzatziki sauce; and 3) a traditional margherita pizza with a layer of baby spinach and lots of fresh mozzarella.

We’ll be making these three (and others) pizzas all summer long; they’re simple, especially since I use the Specially Selected Original Naan Bread from ALDI and didn’t have to make the dough myself! My other favorite ALDI ingredients incorporated into these naan-flatbread-pizzas: SimplyNature Organic Baby Spinach, SimplyNature Organic dried herbs and spices (including Organic Oregano, Cumin, and Basil), SimplyNature Organic 100% Grass Fed Ground Beef, and SimplyNature Organic Tomato Basil Premium Pasta Sauce. And all the fresh produce: organic grape tomatoes, perfectly crispy asparagus, beautiful radishes, garlic, lemon, red onion, and the list goes on. I was impressed with not only the quality and the low-cost, but the great selection! I can’t wait to go back to ALDI this week to stock up on more organic produce and a few other pantry essentials!

The recipes for these 3 pizzas are below; I really hope you enjoy them. I love that they take less than 30 minutes to prepare AND cook, and use the oven minimally (a must this summer)! What are your favorite flatbread pizza recipes? I’d love to try them!

Spring Asparagus, Pickled Radish, and Garlicky Ricotta Flatbread Pizza with Spinach Pesto
prep time: 15 minutes, plus about 10 active and 30 resting minutes to make picked radishes
cook time: 7-10 minutes
serves: 2

Spinach Pesto Ingredients
3 oz. SimplyNature Organic Baby Spinach
1 clove garlic
3 tbsp toasted pine nuts
1/4 cup Priano Shredded Parmesan Cheese
1/2 lemon, juiced (about 4 tsp)
4 tbsp SimplyNature Organic Extra Virgin Olive Oil
1/2 tsp salt, or to taste
1/4 tsp black pepper, or to taste

Pizza Ingredients
4 Specially Selected Original Naan Bread
Spinach Pesto, recipe included
1 1/2 cups Happy Farms Preferred Ricotta Cheese
2 cloves garlic, minced
Coarse sea salt
1 tbsp SimplyNature Organic Extra Virgin Olive Oil, plus more for brushing naan
Quick pickled radishes (I followed this recipe)
Asparagus, sliced in half lengthwise, or in quarters if particularly thick
1/2 lemon, juiced

Spinach Pesto Directions
Place all ingredients except olive oil into food processor and process until coarse. Don’t over-process. Add oil, blend, then taste. Add salt and pepper as needed.

Pizza Directions
Preheat oven to 350 degrees. Place naan directly on oven racks for 5 minutes to lightly toast. Remove from oven and place on baking sheet.

Spread a thin layer of oil over pre-toasted naan, then evening spread a few spoonfuls of pesto over each naan.

Mix together ricotta cheese with minced garlic, 1 tbsp olive oil, and a sprinkle of sea salt, then dollop 3-4 tbsp of ricotta mixture on each naan, and press into pesto without thoroughly spreading. Layer each naan with asparagus and pickled radishes.

Place baking sheet in pre-heated oven for about 5-7 minutes. Then, without remove baking sheet, turn temperature to broil to allow ingredients to brown a bit, about 2-3 minutes, being careful not to burn.

Remove from oven, drizzle with lemon juice, and sprinkle with sea salt. Enjoy!

Greek Flatbread Pizza with Ground Beef and Tzatziki
prep time: 15 minutes
cook time: 7-10 minutes
serves: 2

Tzatziki Sauce Ingredients
2 mini cucumbers, peeled, shredded, and drained of excess water
1 cup SimplyNature Organic Plain Greek Yogurt
2 tbsp fresh mint leaves, chopped
1 tbsp fresh dill, chopped
1 clove garlic, minced
Pinch sea salt
2 tsp SimplyNature Organic Extra Virgin Olive Oil

Pizza Ingredients
4 Specially Selected Original Naan Bread
1 tsp SimplyNature Organic Extra Virgin Olive Oil, for brushing naan
16 oz. SimplyNature Organic 100% Grass Fed Ground Beef
SimplyNature Organic Cumin
SimplyNature Organic Oregano
1 cup grape tomatoes, sliced
1/4 red onion, sliced thinly
1/2 cup Specially Selected Kalamata Olives, sliced in half
8 oz. Happy Farms Preferred Feta Cheese
1/2 lemon, juiced

Tzatziki Sauce Directions
Peel and shred cucumbers. Place in fine mesh strainer and allow water to drain. Alternatively, you can place shredded cucumbers in a few paper towels and squeeze water out. Place in medium bowl and add other ingredients. Mix together thoroughly, and taste. Add salt and/or more garlic, to taste. Put aside.

Pizza Directions
Heat skillet on medium heat. Place ground beef and 1/2 tsp cumin in skillet. Brown until cooked through. Drain any excess fat. Put aside.

Preheat oven to 350 degrees. Place naan directly on oven racks for 5 minutes to lightly toast. Remove from oven and place on baking sheet.

Spread a thin layer of oil over pre-toasted naan, then sprinkle with a dash of oregano and cumin. Layer each naan with ground beef, sliced tomato, sliced onion, and olives.

In a small bowl, mix together feta cheese and a dash each of oregano, cumin, salt, and pepper. Divide feta mixture into 4 parts and sprinkle on naan.

Place baking sheet in pre-heated oven for about 5-7 minutes. Then, without removing baking sheet, turn temperature to broil to allow cheese to brown a bit, about 2 minutes. Remove from oven, sprinkle with lemon juice, slice, and serve with tzatziki sauce!

Margherita Flatbread Pizza
prep time: 10 minutes
cook time: 7-10 minutes
serves: 2

Ingredients
4 Specially Selected Original Naan Bread
2 tbsp SimplyNature Organic Extra Virgin Olive Oil
3 cloves garlic, minced
1 tsp SimplyNature Organic Basil Leaves, plus some for garnish
6 tbsp SimplyNature Organic Tomato Basil Premium Pasta Sauce
4 oz. SimplyNature Organic Baby Spinach
1 cup grape tomatoes, sliced thinly
16 oz. Priano Fresh Mozzarella, sliced thinly
Fresh basil leaves, for topping pizza

Directions
Preheat oven to 350 degrees. Place naan directly on oven racks for 5 minutes to lightly toast. Remove from oven and place on baking sheet.

In a small bowl, mix together oil, garlic, and dried basil. Spread thinly over pre-toasted naan, then spread about 1 1/2 tbsp pasta sauce over each naan. Layer each naan with 1 oz. baby spinach, about 1/4 cup sliced tomatoes, 4 oz. fresh mozzarella, and a few basil leaves.

Place baking sheet in pre-heated oven for about 5-7 minutes. Then, without removing baking sheet, turn temperature to broil to allow cheese to completely melt and brown a bit.

Remove from oven, sprinkle with dried basil, serve hot!
