Ingredients
– 3/4 cup dried cranberries
– 3/4 cup dried apricots
– 2 bars dark chocolate (about 5-7 oz.)
Directions
Place apricots and cranberries in food processor, and pulse until fruit is chopped and forms into a ball. Shape the mixture into 1-inch balls and place on parchment-lined baking sheet.
Put chocolate in a glass bowl and place over small saucepan of water. Bring water to a slow boil, and stir chocolate as it melts. Drizzle about 1-2 teaspoons of chocolate over each fruit ball. Let cool. Makes approximately 15 truffles.

Yum! These look positively delicious and I love that these are actually healthy! The not-so-healthy truffles are amazing, I must admit. But having a better option is quite nice too.

I made these today, and they are great! I added a tsp of coconut oil to the dark chocolate because I think it's easier to work with that way and it gives it an amazing flavor.
