recipe | seasoned popcorn

I come from a popcorn loving family. When we were little, my sisters and I would beg for Jiffy Pop. I was fascinated by the expanding aluminum pan. But my mom usually popped it in a pan on the stove, using some sort of oil (probably olive). When I went away to college, my bestie Susanna was obsessed with popcorn and had one of these. Her room perpetually smelled like popcorn/grease until someone had the brilliant idea to move the popper into the hallway. 

Recently, I’ve been using coconut oil to pop my popcorn. In a BIG pan on the stove (because it’s no use making a little bit of popcorn; there’s always room for more). It really tastes the best this way. Every piece is coated in oil, it’s sorta sweet and just utterly delicious. I usually add only salt, but wanted to find a new recipe. So today, I’m sharing 4 alternate seasonings, and then I’ll tell you which is my new favorite. 
To make your own generous bowl of popcorn, put 1/8 cup coconut oil in a large sauce pan on medium/high heat. Add 1/2 cup popcorn kernels and stir to coat kernels thoroughly. Place lid on top and let your kernels get nice and hot. Once they start popping, shake your pan (don’t lift the lid – this could be dangerous!) every minute or so, to prevent the kernels from burning. Once the popping slows down considerably, remove the pan from heat and allow the remaining kernels to pop. Carefully remove the lid (shield your eyes somehow – sometimes those kernels escape from the pan). Then add your seasoning of choice. Here are my little recipes. 

Variation 1
– 1/2 tsp onion powder
– 1/2 tsp garlic powder
– 1/2 tsp salt
– 1/2 tsp pepper
– 1/2 tsp paprika

Variation 2
– 1/2 tsp garlic powder
– 1/2 tsp red pepper flakes
– sprinkle of salt

Variation 3
– 1/2 tsp cumin
– 1/2 tsp chili powder
– sprinkle of salt

Variation 4
– 1/2 tsp salt
– 1/2 tsp pepper

And my favorite? The simplicity of the salt and pepper won me over this time!

    Homemade kettle corn- after popping the way you described, stir together pure maple syrup and a bit more melted coconut oil, then drizzle mixture evenly over popcorn and return to low heat, stirring constantly until syrup mixture begins to brown and popcorn becomes crunchy and delicious. Sprinkle with salt for desired blend of sweet/salty. Yum.

    Mmm, this sounds delicious! I love seasoning my popcorn, it definitely makes for a more interesting snack. I've never tried cumin though…that'll be my next snack!

    Have you ever tried seasoning popcorn with truffle salt? That is my ultimate favorite.

  9. Try adding a bit of freshly grated Parmesan…or a bit of Cheddar and some chili powder. Not only is it tasty it adds protein to your snack and helps keep your blood sugar levels from jumping and dropping dramatically.

    LOVE this post, I am a big BIG popcorn pan, my current favourite recipe is sunflower oil to pop the corn and then…

    1 tsp fine sea salt
    1/2 tsp course ground black pepper
    1 tsp cayenne pepper

    Yum Yum Yum

    You totally speak my language!
    I only make homemade popcorn, on the stove, in oil and have been since about 5th grade.
    When I got married, my mom even gave me my special popcorn pot. 🙂
    I just switched to coconut oil as well and really like the subtle flavor it adds to the popcorn.
    I really like salt and pepper potato chips, so I am excited to try it on my popcorn.
