Healthy Energy Bites Recipe

This healthy energy bites recipe is killer; they’re almost irresistible. Even though they’re healthy, I do have to limit my intake (it’s possible to eat 4 without even realizing it). I’m eighteen days into my 4th 75 HARD attempt. More on 75 HARD later…but here are my attempts: 2021 – failed at day 62 due to an emotional day and I was weak; 2022 – FINISHED STRONG; 2023 – failed at day 22 in the middle of our big move and I was weak).

I developed this recipe because I wanted to successfully avoid the cookie (or two) or a handful (or two) of chocolate covered almonds I’d gotten into the HABIT of eating every afternoon. I wanted a healthy alternative (while also training my body to ask: am I hungry? do I need fuel or am I eating out of boredom?). These energy bites are in line with my diet for 75 HARD: no gluten/rice/pasta/bread/white potatoes, no refined sugar/juice/soda, mindful of soy/corn/seed oils, limited fruit, limited dairy, limited carbs, salad every day, lots of veggies and protein. These energy bites are truly life-giving and delicious. I didn’t expect them to be as tasty as they are, hence the need for self-control.

Healthy Energy Bites

Ingredients

  • 3 1/2 cups sprouted oats
  • 1/4 cup pure maple syrup
  • 1/2 cup coconut oil, melted
  • 1 1/2 cups peanut butter
  • 1 1/4 cup almond flour
  • 3/4 cup unsweetened coconut
  • 1/2 cup ground flax seed
  • 1/4 cup unsweetened cocoa powder
  • 1 cup soaked dates, chopped

Mix all ingredients in a large mixing bowl (with your hands may work best). Roll into heaping tablespoon sized balls. Refrigerate. Freeze any you won’t eat in a few days. You can play around with different nut butters, sweeteners, add-ins, etc. This recipe makes about 55 bites, so if that’s far too many, you can either freeze extras or reduce the quantities.
