OK, seriously. These muffins will melt in your mouth. And they're healthy.
They're perfect for breakfast, second breakfast, third breakfast, a snack, dessert, a birthday, etc.
Ingredients
1 2/3 cup sprouted spelt flour
1 cup canned pumpkin puree
1/4 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
3/4 tsp sea salt
1/2 cup pure maple syrup (or raw honey)
1/4 cup cold water
1/2 cup coconut oil
2 eggs
Directions
Preheat oven to 325. Mix everything together in one medium bowl. Stir thoroughly.
Place muffin papers in pan and fill 2/3 full with batter. Bake for approximately 25 min. Sprinkle with sugar (optional). Cool on racks (or serve warm). Makes about 12 muffins.

This looks so delicious! I think I need to go to one of those huge supermarkets now! Because I don't think I can find pumpkin puree at our local grocery store! And I really need to try these!
