I partnered with ZICO Coconut Water to develop a cocktail recipe for New Year’s Eve, and I wanted to make one that had a tasty non-alcoholic option! We’ll be celebrating New Year’s Eve at our friends’ home this year, and I’ll be bringing what I brought last year: pigs in a blanket with the tastiest ever yogurt-mustard dipping sauce. I’m also bringing (if it’s ok with you, Jen) the ingredients to make this cocktail, which can easily be turned non-alcoholic (there will be at least 3 pregnant mamas at this party) by simply omitting the vodka. This cocktail is citrusy and oh-so-fresh. I love that the ZICO Coconut Water is 100% coconut water with no sugar added. This cocktail is my favorite kind: the fresh citrus juice keeps it sweet and perfectly tangy, and the coconut water adds hydration.
Citrus Coconut Vodka Cocktail
makes 2 drinks
2 oz vodka
2 oz ZICO Coconut Water
2 oz tonic water
Juice from 1/2 lemon (about 1 oz)
Juice from 1 orange (about 4 oz)
Add ingredients to highball glass and mix thoroughly. Divide between two glasses. Add generous amount of ice. Garnish with lemon wedge. Enjoy!
